Ingredients:
- 1 cup cracked wheat
- 2 cups water
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup chopped fresh parsley
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh mint leaves
- 1/4 cup dried cranberries
- 1/4 cup toasted pine nuts
- 1/4 cup feta cheese crumbles
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
In a medium saucepan, bring 2 cups of water to a boil
Add the cracked wheat, reduce heat to low, cover, and simmer for about 15 minutes or until the wheat is tender and has absorbed all the water
Fluff with a fork and let it cool to room temperature
In a large bowl, combine the cooked cracked wheat, diced cucumber, diced tomatoes, chopped parsley, chopped red onion, chopped mint leaves, dried cranberries, toasted pine nuts, and feta cheese crumbles
In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing
Pour the dressing over the salad ingredients and toss everything together until well combined
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld
Serve the Cracked Wheat Harvest Salad as a refreshing and nutritious side dish or as a light main course
