Light Crock Pot Fiesta Chicken and Rice Bowls



These light crock pot fiesta chicken and rice bowls are a healthy and flavorful meal option. Packed with protein, fiber, and delicious spices, they're perfect for a satisfying dinner.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup salsa
  • 1 cup low-sodium chicken broth
  • 1 cup frozen corn kernels
  • 1 can 15 oz black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • Optional toppings: chopped cilantro, sliced avocado, shredded cheese, Greek yogurt

Instructions:

In a crock pot, combine chicken, salsa, chicken broth, corn, black beans, cumin, chili powder, garlic powder, salt, and pepper

Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are well combined

Serve over cooked brown rice

Top with optional toppings as desired
